The unique online course by the Matthew Kenney Academy begins in August and is available monthly throughout 2013. The Matthew Kenney Academy offers classically structured raw and living foods classes at in multiple locations in the U.S. and online. Essentials of Superfoods was filmed at the Matthew Kenney Plant Lab in Belfast, Maine. When we interviewed Matthew Kenney back in the Sept. 2012 edition, we also announced the opening of his new restaurant and Academy in Santa Monica, California, - and now he has opened another new restaurant, The Gothic, in Belfast - a quaint coastal Maine village that is near his childhood home. In its first three years, the Matthew Kenney Academy has graduated students from over 30 countries. The MK Academy also offers onsite courses in Miami.

The curriculum of Essentials of Superfoods is defined by its 4 weekly outlines, each course session progressing in such a way that the material learned is applied to additional instruction. Each session features cutting-edge video lectures and demonstrations by Superfood expert Julie Morris with appearances by Matthew Kenney, as well as other unique forms of instruction. Earlier this week, we brought our new Dragonfruit Slices to the Summer Fancy Foods Show in New York City. The chewy red superfruit created quite a buzz, including recipe questions about how to use this unusual fruit from a night-blooming cactus. Below is a practical and tasty new Dragonfruit Granola recipe by chef Julie Morris. It's an ideal breakfast to fuel a summer adventure. This granola recipe stands out from the crowd, due to the chewy sun-dried dragonfruit’s sweet flavor, fluorescent color and antioxidant nutrition. This low-fat granola is a serious upgrade of an old classic. Makes 6 cups.

2 Cups Rolled Oats
½ Cup Slivered Almonds
3 Tbsp Navitas Naturals Sprouted Flaxseed Powder
1 tsp Cinnamon Powder
⅓ Cup unsweetened Applesauce
2 Tbsp Coconut Oil, melted
1 Tbsp Vanilla Extract
¼ tsp Sea Salt
⅓ Cup Navitas Naturals Coconut Palm Sugar
2 Tbsp Agave Nectar, divided
2 Cups Crispy Brown Rice Cereal
¾ Cup Navitas Naturals Dragonfruit Slices, cut into small squares
1 Tbsp Navitas Naturals Maqui Powder (optional)
1 Tbsp Navitas Naturals Pomegranate Powder (optional)

Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.

In a large bowl, mix the oats, almonds, flaxseed powder, and cinnamon together. In a separate small bowl, mix the applesauce, oil, vanilla, sea salt, coconut sugar and 1 tablespoon agave nectar until smooth. Pour the liquid mixture into the the dry and stir to combine. Transfer the granola to the prepared baking sheet, spreading into an even layer. Bake for 20 minutes. Remove from oven, add the rice cereal and remaining 1 tablespoon agave, and toss well to distribute. Use the back of a spatula to press into a flat layer. Return the pan to the oven and bake for 25-35 minutes longer, or until granola just begins to turn golden. Remove from oven, toss in the dragonfruit slices and sprinkle with superfruit powders if using, tossing well. Let the granola cool completely to crisp.

Store granola in an airtight container when not in use.
