This past weekend, we had the pleasure of having Marni Wasserman present our foods at the Toronto Vegetarian Food Festival. We admire her blend of energy, nutrition know-how, culinary art and passion for active healthy living. The Culinary Nutritionist and Health Strategist recently opened a Studio and Lifestyle Shop in Toronto. We interviewed her to get all the latest details on that project, as well as her favorite early autumn recipe.

For the last 5 years Marni has taught cooking classes and workshops out of her home kitchen. Every class reflects her passion for plant-based whole foods and an overall healthy lifestyle. More recently, she opened a cooking studio in Toronto. The space also serves as a Lifestyle Shop featuring Marni-Approved products that she uses on a daily basis, including many Navitas Naturals products.

Navitas Naturals (NN): Congrats on the recent opening of the Marni Wasserman Food Studio and Lifestyle Shop in Toronto. Compared to your previous space, how has the new studio enhanced your services and overall work vibe?

Marni Wasserman (MW): Thank you! This space has allowed me to grow my business. I can now offer more classes, workshops and retreats with the Studio, while featuring a variety of products in the Lifestyle Shop. I wanted the space to reflect my values, so I made sure that I was deeply involved in the design process. Everything is eco-friendly and sustainable, with a fresh modern appeal. With this accessible location, I am part of a Toronto community full of great people and businesses with so much potential for collaboration. I love being able to come to work in the morning, open my door and put out a sidewalk sign inviting the public to come upstairs and say “Hi”.

NN: What is the Marni Wasserman nutrition philosophy, and what is the most important thing our readers should be mindful of as they munch and quench throughout their day?

MW:I believe that food and cooking should always be “Simple & Delicious”. My goal for every class is to encourage people to be conscious of what they are putting in their bodies. At the same time, I want it to resonate with them that making healthy, conscious food choices is easy to do and easy to make. Of course, most importantly it has to be delicious - and is.

NN: You offer many different cooking classes, but which one is the most fun and delicious for you?

MW: My cultural classes are so much fun! It’s the best when your taste buds can travel the world to Asia, Italy or India, while still being vegan, organic and good for you! I also love any of my health inspired classes like “CalciYum.” They’re a great opportunity for people with similar interests and maybe health concerns to connect with each other to gain more insight. *Check out this link for Marni’s class calendar and details.

NN: Which Navitas product do you use the most during your nutrition classes and which is your personal favorite?

MW: I use Navitas Chia Seeds, Cacao and Goji Berries the most in my classes. And I would say that my personal favorites (and I have many favorites - not just one) are Maca and Maqui.

NN: With autumn approaching, what seasonal superfood recipe are you most looking forward to preparing?

MW: Now that the temperature is dropping, I just want to get cozy on the couch with my Apple Cinnamon Bites made with Navitas Naturals Hemp Seeds. These bites are not only filled with long lasting quality “energetic” ingredients like oats, dates, coconut oil and apples, but they are also high in fiber and gluten-free. They make a great snack to take to school and are ideal for a breakfast on the go!

Apple Cinnamon Bites

1⅓ Cups Dates
½ Cup Navitas Naturals Sprouted Flaxseed Powder or Navitas Naturals Hemp Seeds
½ tsp ground Cinnamon
2 Tbsp Flax Oil or Coconut Oil
½ Cup dried Apple Pieces, coarsely chopped
⅔ Cup Oat Flakes
2 Tbsp Apple Butter or Honey
Roll in crushed sunflower, hemp or pumpkin seeds

Place dates in food processor and blend until you form a thick paste. Place in a large bowl and stir in the flax powder, ground cinnamon, dried fruit, oil and apple butter using a fork or your hands to combine and add oats last. Form into small balls by the teaspoon-full. After rolling in sunflower, hemp or pumpkin seeds, place in a container and refrigerate or freeze – they taste great right from the freezer.

This month’s feature recipe, Kale Apple Salad with Pineapple Hemp Dressing, was created by holistic chef and certified healing foods specialist Shelley Alexander. Navitas Naturals (NN):What is the most noteworthy nutritional aspect of this recipe, and which superfoods does it highlight?

Shelley Alexander (SA): I create all of my healing foods recipes to maximize nutrient density and to provide delicious flavor combinations so you want to eat healthy foods. Since I adore eating salads almost daily, I like to experiment with different varieties of local, organic produce from the farmers’ markets to satisfy my palate and to make sure I never tire of eating them. In this recipe, Navitas Naturals Hemp Protein Powder, Lucuma Powder, and Hemp Seeds are paired with curly kale, avocado, apple, and pineapple to provide fantastic flavor and important nutrients for detoxification and healing.

SA: Hemp is one of my favorite superfoods because it’s a sustainable plant and it’s one of the best plant-based sources of protein available with all the essential amino acids that your body needs. Hemp is also a rich source of chlorophyll, fiber, antioxidants, vitamins, and minerals, along with the ideal balance of essential fatty acids omega-3 and omega-6 in a 3.75:1 ratio. Hemp protein is easy to digest and it really blends well with the other ingredients in this recipe because of its mild, nutty flavor.

Kale is the second important superfood highlighted in this recipe. It provides delectable flavor and good chewy texture in this salad. Kale is a versatile leafy green vegetable that’s really good in green smoothies, salads, soups, stews, and a variety of other raw and cooked dishes. Kale is a Brassica vegetable and a member of the cruciferous family of vegetables and it contains a tremendous amount of phytochemicals that promote detoxification and healing. Kale is also an excellent source of chlorophyll, carotenoids, and flavonoids. Navitas Naturals Lucuma Powder adds tasty vanilla-maple flavor to the dressing along with nice sweetness to balance and enhance the other ingredients in the salad. Lucuma contains beta-carotene, B vitamins, iron, and fiber that are important for vibrant health. I also love that lucuma is low in sugar which makes it a much better health alternative for adding sweetness to your recipes than refined white cane sugar.

NN: Can you tell our readers about your new book Deliciously Holistic?

SA: Deliciously Holistic is an expression of my journey to vibrant health and wellness using the power of healing whole foods and holistic lifestyle principles. My career in natural health and healing foods started when I experienced my own personal health crisis in 2007. My body healed from illness by eating organic, nutrient-rich, whole foods and superfoods, and doing holistic healing methods. That encouraged me to pursue training to become a certified healing foods specialist in 2008, and ultimately led to this book. Good nutrition never has to be at the cost of great taste. I wanted to provide a book where I could share the valuable holistic health information and cooking knowledge I have learned from working as a professional chef and certified healing foods specialist for many years. My full color cookbook has 154 delicious whole foods recipes for every meal with the health benefits and many food photos included. Kale Apple Salad with Pineapple Hemp Dressing

Raw Vegan, Dairy-Free, Gluten-Free, Nut-Free (Serves 4)

Pineapple Hemp Dressing (Makes around 1¼ Cups)

⅔ Cup Pineapple Cubes
3 Tbsp purified or spring Water
1 small Avocado (peeled and seed removed)
⅛ tsp fresh ground Black Pepper
¼ tsp Himalayan Sea Salt
2 Tbsp Navitas Naturals Hemp Protein Powder
1 Tbsp Navitas Naturals Lucuma Powder

Place pineapple,water, avocado, black pepper, sea salt, hemp protein powder, and lucuma powder in a blender and blend until smooth. Set aside ¼ cup to use in the kale apple salad. Place leftover dressing in a container with lid and store in the refrigerator for up to 4 days. This dressing is good with sliced raw vegetables, shredded raw cabbage, and green salads.

Kale Apple Salad

1 large bunch of organic curly kale–around 4 to 5 cups
½ tsp Himalayan Sea Salt
1 large organic Apple–core and cut into cubes
⅛ Cup Pineapple Cubes
⅛ Cup Navitas Naturals Hemp Seeds

Remove large ribs from kales leaves, tear leaves into small pieces, and clean thoroughly with water to remove dirt. Dry kale in a salad spinner or pat dry with a towel. Place kale in a bowl. Sprinkle with sea salt to evenly coat leaves. Use your clean hands to massage kale leaves for 2 minutes to help soften them. Once kale starts to soften, drain off any liquid in bowl and add ¼ Cup of pineapple hemp dressing, apples and pineapple and toss with hands to coat fruits and kale with dressing. Add more dressing if needed. Sprinkle salad with hemp seeds and serve immediately.
