Q: How is your Cacao Paste processed?
A: Navitas Naturals organic Cacao is picked and then immediately starts a natural fermentation in the fruit like pod for about 48-72 hours. Once extracted from the pod, purified water is used to cleanse the beans. The beans are then low temperature dried and their shells are removed before being crushed in to smaller nib size pieces. To make a paste, the nibs are churned and ground down until a raw paste forms. Navitas Naturals uses the least invasive, lowest impact, and lowest temperature processing methods available in an effort to preserve the maximum nutritional density of our superfoods.
Q: My Cacao Paste has a strong scent and intense bitter flavor - is that normal?
A: Yes, cacao undergoes a natural fermentation and that gives it a scent similar to vinegar. This is normal and it is still fine to consume. It is common that the flavor is more bitter and stronger than what people associate with chocolate. Navitas Naturals Cacao Paste is 100 % pure cacao and has not been diluted or enhanced with sugar and/or other ingredients that chocolate is traditionally made with.
