The beans are washed with purified water, partially fermented to remove bitterness and are then ready for low temperature processing. We gently roll our crumbled beans into our Navitas Naturals Cacao Paste and organic cane juice for a rich and lightly sweet flavor that's pure chocolatey goodness.

Q: How are your Cacao Nibs processed?
A: Navitas Naturals organic Cacao is picked and then immediately starts a natural fermentation in the fruit like pod for about 48-72 hours. Once extracted from the pod, purified water is used to cleanse the beans. The beans are then low temperature dried and their shells are removed before being crushed in to smaller nib size pieces. Navitas Naturals uses the least invasive, lowest impact, and lowest temperature processing methods available in an effort to preserve the maximum nutritional density of our superfoods.
Q: Can your Cacao Nibs be eaten raw (as is?), or do they need to be cooked?
A: The beans, nibs, and powder can be consumed raw and in fact, you get more benefits not heating or cooking raw cacao as it is full of enzymes, vitamins, and nutrients that are carefully preserved in the low temperature processing. You can still use raw cacao in hot drinks and baking, but you lose some of the nutrients. Take note that minerals aren’t affected by heat so you still get those benefits despite how the cacao is prepared.

A: There is a minimal amount of caffeine in raw cacao:

Q: My Cacao Nibs have a strong scent and intense bitter flavor - is that normal?
A: Yes, cacao undergoes a natural fermentation and that gives it a scent similar to vinegar. This is normal and it is still fine to consume. It is common that the flavor is more bitter and stronger than what people associate with chocolate. Navitas Naturals Cacao Nibs are 100 % pure cacao and are not diluted or enhanced with sugar and/or other ingredients that chocolate is traditionally made with.
