Instant Chocolate Nutrition
In Aztec society, the drinking of cacao beverages was considered a privilege, and was enjoyed by the elite. The last Aztec emperor is said to have preferred his cacao prepared with savory flavors and that his roasted cacao beans be blended with Atole or coarse corn flour and whisked into a rich foamy brew flavored with chilies, vanilla, cinnamon and salt. Transform your favorite smoothies, shakes, puddings, brownies, cookies and cakes into super chocolatey concoctions with Navitas Naturals Cacao Powder.
Cacao Powder: Frequently Asked Questions
Q: How is your Cacao Powder processed?
A: Navitas Naturals organic Cacao is picked and then immediately starts a natural fermentation in the fruit like pod for about 48-72 hours. Once extracted from the pod, purified water is used to cleanse the beans. The beans are then low temperature dried and their shells are removed before being crushed in to smaller nib size pieces. To make a paste, the nibs are churned and ground down until a raw paste forms. When raw cacao is cold pressed under immense pressure, the oils separate from the fiber or ‘cake’. The oils solidify at approximately 95°F and become 100% Cacao Butter. The powdery cake is slowly turned until it reaches the silky consistency of pure Cacao Powder. Navitas Naturals uses the least invasive, lowest impact, and lowest temperature processing methods available in an effort to preserve the maximum nutritional density of our superfoods.
Q: Can Cacao Powder be eaten raw (as is?), or does it need to be cooked?
A: Yes, the powder and nibs can be used raw and in fact, you get more benefits not heating/cooking raw cacao as it is full of enzymes, vitamins, and nutrients that are carefully preserved in the low temperature processing. You can still use raw cacao in hot drinks and baking, but you lose some of the nutrients. Take note that minerals aren’t affected by heat so you still get those benefits despite how the cacao is prepared.
Q: What is the difference between Cocoa and Cacao and can I use them in the same way?
A: Often times the terms cacao and cocoa are synonymous when referring to a powdered confectionary chocolate. However, the term cocoa can also refer to a combination of ingredients that represent a chocolate flavor, but also include sugar, dried milk, and/or other colorings or additives. Navitas Naturals Cacao Powder is organic, raw, non-GMO, pure, fairly traded, and non-alkalinized. Pure Cacao is 100% chocolate, rich in flavor, and nutritionally abundant. Navitas Naturals Raw Cacao Powder can be used as a 1:1 substitute for conventional “cocoa”.
