Tropcial Island Truffles

These truffles are great to keep on hand in the fridge for a snack to hold you over until your next meal or to serve as a lovely dessert.


½ Cup Navitas Naturals Cashew Whole Nuts
¼ Cup Navitas Naturals Chia Seeds
1 Tbsp Navitas Naturals Goji Berries
2 Tbsp Navitas Naturals Raw Maca Powder
½ Cup shredded Coconut
¼ Cup sunflower seeds
1 Tbsp Golden Raisins
½ tsp Sea Salt (Maldon)
6 Medjool Dates (pitted)
¼ Cup Dried Pineapple
3 Tbsp Coconut Cream
½ tsp Vanilla Extract


Combine dates, pineapple, coconut cream, maca powder and vanilla extract in a food processor until combined and resembles the consistency of Silly Putty. Add cashews, shredded coconut, sunflower/chia seeds, raisins, goji berries and sea salt and pulse until just combined. Smash and mold into desired mold/ shape. Allow the truffles to “set” in the fridge for 30 minutes before eating. Stored in an airtight container in the fridge, truffles will last for a few months…but bet they will probably be gone in a few days!
