Dragonfruit Granola

brighten your breakfast

Thanks to its fluorescent color and antioxidant nutrition, sun-dried dragonfruit makes this low-fat granola a standout variation of the normal breakfast fare. 

Ingredients

2 Cups Rolled Oats
½ Cup Slivered Almonds
3 Tbsp Navitas Naturals Sprouted Flaxseed Powder
1 tsp Cinnamon Powder
⅓ Cup unsweetened Applesauce
2 Tbsp Coconut Oil, melted
1 Tbsp Vanilla Extract
¼ tsp Sea Salt
⅓ Cup Navitas Naturals Coconut Palm Sugar
2 Tbsp Agave Nectar, divided
2 Cups Crispy Brown Rice Cereal
¾ Cup Navitas Naturals Dragonfruit Slices, cut into small squares
1 Tbsp Navitas Naturals Maqui Powder (optional)
1 Tbsp Navitas Naturals Pomegranate Powder (optional)

Directions

Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.

In a large bowl, mix the oats, almonds, flaxseed powder, and cinnamon together. In a separate small bowl, mix the applesauce, oil, vanilla, sea salt, coconut sugar and 1 tablespoon agave nectar until smooth. Pour the liquid mixture into the the dry and stir to combine. Transfer the granola to the prepared baking sheet, spreading into an even layer. Bake for 20 minutes. Remove from oven, add the rice cereal and remaining 1 tablespoon agave, and toss well to distribute. Use the back of a spatula to press into a flat layer. Return the pan to the oven and bake for 25-35 minutes longer, or until granola just begins to turn golden. Remove from oven, toss in the dragonfruit slices and sprinkle with superfruit powders if using, tossing well. Let the granola cool completely to crisp.

Store granola in an airtight container when not in use.

Chef's Notes

Using the optional superfruit powders (maqui and pomegranate) helps to further enhance the fruity flavor. Great as a cereal, or a crunchy topping for parfaits and fruit bowls.
