Berry-Balsamic Froyo

While there may not be any yogurt inside this frozen dessert, the flavor certainly suggests it thanks to mineral-rich raw cashews. Super fruits – acai, goji, pomegranate and strawberries here – blend extremely well with a little bit of balsamic vinegar, which helps to bring out their sweet flavor even further.


2 Cups unsweetened Almond Milk
½ Cup Navitas Naturals Raw Cashews
2 Tbsp Navitas Naturals Antioxidant Blend
2 Cups Frozen Strawberries
¼ Cup Agave Nectar, or other liquid sweetener
2 Tbsp Balsamic Vinegar
½ tsp Guar Gum (optional)
pinch Sea Salt


In a blender, combine the almond milk and cashews. Blend into a smooth cream. Add all the remaining ingredients and blend well. Transfer mixture to a sealable container, and freeze for 6-7 hours, or until frozen through. (Alternatively, use an ice cream machine and follow manufacturer’s instructions.) To serve, let defrost for 5-10 minutes to soften, then scrape the frozen blend with a spoon into a fluffy “snow,” and gather into ice-cream-like balls. Place in serving bowls as desired.

Chef's Notes

If using a blender that is not a high-speed variety, soak the cashews for 1 hour in the almond milk before blending to soften.
