Sweet & Sour Apple Salad

light & refreshing

Light and crunchy with loads of flavor, this refreshing salad can be served as a starter, but could easily be doubled in serving size and made a full meal.


4 cups (packed) Green Cabbage, shaved thinly
2 Green Apples, cored and grated (or sliced thin with a mandolin)
½ Cup Slivered Almonds
½ Cup Navitas Naturals Goldenberries
¼ Cup Crystalized Ginger, finely chopped
½ Serrano Pepper, deseeded and minced
1 tsp freshly grated Ginger Root
1 Lime, juiced
1 Tbsp Soy Sauce
2 Tbsp Safflower Oil
2 Tbsp Navitas Naturals Coconut Sugar
2 cups (packed) Baby Arugula
Sea Salt and Black Pepper, to taste


In a large bowl, combine the cabbage, apples, almonds, goldenberries, crystalized ginger, and serano pepper. Add the fresh ginger, lime, soy sauce, safflower oil and coconut sugar, and toss well. Refrigerate for 20 minutes to allow the flavors to combine. Taste, and add salt and pepper if desired. Just before serving, add the arugula and toss lightly, then transfer to serving plates.
