hearty high protein
These gluten-free pancakes are super easy to make. Lucuma adds a naturally sweet maple flavor, and is packed with anti-oxidants, minerals and vitamins: carotenes and Vitamin B 3.
½ Cup Apple Juice
1 Tbsp Maple Syrup
1 tsp Vanilla Extract
½ Cup Buckwheat Flour
*1 Tbsp Navitas Naturals Lucuma Powder
1 tsp Baking Powder
½ tsp Celtic Sea Salt
Extra Virgin Coconut Oil for frying
Whisk the egg in a medium sized bowl. Stir in juice, maple syrup and vanilla. Add flour, baking powder, salt, and stir until well combined.
Heat the coconut oil over medium heat in a cast iron griddle or heavy skillet. Brush it over the surface when it melts. Ladle batter onto the hot pan. Fry for about 2 minutes until the tops are bubbly and edges appear dry. Flip over pancakes and fry for about a minute until the bottoms are brown.

* If you do not have Lucuma powder, you can just use all buckwheat flour or substitute Maca Powder for the Lucuma.
