Amazon Acai Chicken
Yes, this dish is purple! But don’t be fooled by it color, it tastes like butter chicken and it's delicious.
3 Chicken Breasts
2 Tbsp Navitas Naturals Acai Powder
1 tsp Vanilla Powder or Pod Scrapings
15 oz light Coconut Milk (for richer versions replace milk with Coconut Cream)
½ Cup of Cognac
3 dry Hisbiscus Flowers
Coconut Water Rice
2 Cups Water
1 Cup Rice
2 Tbsp Navitas Naturals Coconut Water Powder
Pre-heat oven at 350F (176C)
Use a deep baking tray, 8” x 8” (10 x 10 cm). Place in the oven to heat the dish while preparing the chicken Chop chicken into cubes (approx. ½“ or 1 cm) and lightly salt them.
In a bowl beat the acai powder with the coconut milk, cognac and vanilla until fully dissolved and milk is purple.
Remove baking tray from oven, evenly place the chicken and hibiscus flowers inside the dish and pour the purple coconut milk over the top. Stir and return to the oven for 30 to 45 minutes accourding to the size of the chicken. Stir every 10mins. Remove from the oven. Remove hibiscus flowers.
Boil rice with two tbsp of navitas coconut water powder, Himalayan salt. Remember to boil 2 cups of water to one cup of rice. Then slowly simmer the rice covered. When the water has absorded then Open the rice with an organic coconut butter or oil. That’s how dad taught me to make rice.
