Chia Cranberry Sauce
Presenting the easiest cranberry sauce ever, as well as a wonderful way to incorporate superfoods onto a holiday table!
In a quart-sized mason jar, combine all of the ingredients. Seal with a tight-fitting lid, and shake well to combine. Let sit for 20 minutes, then shake again to break up any chia seeds that have clumped together. Refrigerate for 2 hours to allow the sauce to thicken, shaking the glass once or twice during the process to redistribute the ingredients. May be made a day or two in advance; lasts up to 2 weeks, refrigerated.
You don’t need to touch the stove for this recipe, which relies on chia seeds, dried goji berries, and just a little time in the refrigerator to help it set. Make it the day before to maximize flavor (and lessen the task list right before mealtime).
