Chocolate Dragonfruit Hearts
Showcase the natural beauty of dragonfruit with this romantic recipe.
Carefully separate all the dragonfruit slices, and select all the whole pieces. Use kitchen scissors to hand-cut into each slice into a heart shape. Place in the freezer until ready to use. Have a flat ceramic plate ready nearby.
To make the chocolate, place the cacao butter in a sauté pan, and melt over very low heat (a double boiler may also be used). Once the butter has liquefied, remove from heat and whisk in the cacao powder until combined. Add the agave and salt, and whisk very well to incorporate. Transfer chocolate to a small cup or ramekin. Dip the dragonfruit hearts halfway into the chocolate. Let the excess chocolate drip back into the bowl, and dip once more to obtain a thicker coating. Once excess chocolate has dripped away, place on ceramic plate. Repeat with remaining hearts. Place plate in the freezer for 20 minutes to allow the chocolate to harden. Remove hearts from the plate with a metal spatula to pop off the solidified chocolate portion. Hearts may be refrigerated or stored at room temperature.
Though making a raw chocolate dip from scratch is rewarding (from both a flavor and nutrient standpoint), you can also save time by melting ⅔ cup semi-sweet chocolate chips in its place.
