Pomegranate Kale Salad
Pretty in Pink
Pomegranate powder creates a beautiful pink salad dressing, which is especially fantastic when paired with salads composed of leafy green vegetables and fruit.
2 Tbsp Olive Oil
2 Tbsp White Balsamic Vinegar
3 Tbsp Navitas Naturals Pomegranate Powder
1 tsp Agave Nectar
¼ tsp Sea Salt
½ tsp Black Pepper
1 large bunch Kale, stemmed and chopped
4 ounces Sunflower Sprouts
½ Cup Pomegranate Seeds
⅓ Cup Sunflower Seeds
1 medium Asian Pear, cored and sliced thin
Make the dressing first: in a mixing bowl, whisk together the olive oil, vinegar, pomegranate powder, agave, salt and pepper until combined.
In a large bowl, combine the kale, sunflower sprouts, ¼ cup pomegranate seeds, ¼ cup sunflower seeds and Asian pear. Toss with as much of the salad dressing as desired. To serve, top with remaining pomegranate seeds and sunflower seeds.
