pop of flavor
Colorful dragonfruit makes these light mini muffins pop with color… and flavor.
2 Tbsp Flaxseed Powder
1/3 cup Apple Juice
1½ cups Gluten-Free Baking Flour
2 Tbsp Navitas Naturals Lucuma Powder
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Sea Salt
½ cup Navitas Naturals Dragonfruit Slices, cut into small confetti
¼ cup Coconut (or Soy) Yogurt
¼ cup Applesauce
¼ cup Coconut Oil, melted
¼ cup Agave Nectar
1 tsp Vanilla Extract
1 tsp fresh Lemon Zest
Preheat the oven to 350°F. Lightly grease a mini muffin pan or use paper liners.
In a small cup, mix together flaxseed powder and apple juice. Let stand for 15 minutes to allow the mixture to thicken into a gel.
In a large bowl, mix together the flour, lucuma powder baking powder, baking soda and sea salt.
In a medium bowl, whisk together the yogurt, applesauce, coconut oil, agave, vanilla and lemon zest. Mix in the chopped dragonfruit. Pour the liquid mixture into the dry ingredients and mix until just combined – do not overmix.
Distribute the batter amongst muffin cups, and lightly smooth the tops. Bake for 18-20 minutes or until golden brown. Let cool before serving.
