I Love Ginger Cookies

For those ginger lovers out there: treat yourself to this fun dessert recipe which only takes 10 minutes start to finish!You can also try rolling in some crystallized ginger for an extra gingery punch.
½ Cup Sesame Seeds
¼ Cup Navitas Naturals Hemp Seeds
⅔ Cup pitted medjool dates, (about 8)
1 Cup unsweetened Coconut
1 heaping tsp Ginger Powder (more if desired)
pinch Sea Salt
Combine all ingredients in a food processor and mix into a dough. Add additional dates or hemp seeds if needed – dough should stick together and be stiff.
Sandwich the dough between 2 pieces of wax paper on top of a cutting board or table. Roll out into a flat sheet to desired thickness, and cut (or use small cookie cutter shapes!) to form into soft little cookie bites. Makes about 12-20 cookies, depending on the size of the cookie.
