Mighty Mineral Kale Salad

Meal in a bowl

This salad is a meal all by itself thanks to mineral superstars like nori, kale, and sesame seeds.


1 Tbsp Navitas Naturals Yacon Syrup
3 Navitas Naturals Nori Sheets
1 bunch Kale
2 Tbsp raw Tahini (Sesame Seed Paste)
1 minced medium clove Garlic
2 Tbsp Yellow Miso Paste
2 Tbsp fresh Lemon Juice
1 Tbsp minced Ginger
1 to 3 Tbsp Water
2 to 3 Tbsp Sesame Seeds (optional)


Wash the kale and dry thoroughly. Strip the tough middle stalk from each leaf and discard. Tear the kale leaves into bite size pieces and place in a large bowl.

Place tahini, miso, garlic, ginger, yacon syrup, lemon juice, and 1 Tbsp water in a blender. Blend until smooth, adding additional water a tablespoon at a time if needed to achieve a uniform texture. Using a small spatula to scrape the sides of the blender clean, pour all the dressing onto the prepared kale.

With clean hands, massage the dressing into the kale for about 2 minutes, squeezing firmly to help soften the vegetables. Dry hands well, and tear the nori sheets in half, then half again, then half again, and so on until 1 inch nori pieces are formed. A little at a time, sprinkle the nori pieces into the salad and mix. Adding the nori slowly ensures that it is distributed throughout the salad and does not clump together when it softens.

To serve, sprinkle with sesame seeds if desired. Makes 2 large servings, or 4 side dish portions.
