Tomato Corn Gazpacho
Fresh Cold Soup
Fresh and easy, this soup brings to light all the flavors of a happy summer garden.
½ Cup fresh Basil, packed
½ Cup Water
½ tsp Sea Salt
⅓ Cup Hemp Oil or other EFA-Rich Oil
2 Tbsp Navitas Naturals Goji Berries Powder
3 Cup chopped Tomatoes
2 Tbsp minced Shallots, about 1-2 Shallots
2 Cup fresh Corn Kernels (+ 3/4 cup)
Blend all ingredients except for ¾ cup of the corn kernels until fairly smooth. Mix in remaining corn. Ideally, let flavors develop for a minimum of 30 minutes in the refrigerator before serving.
