Sloppy Veggie Joe

Vegetarian Fare

Sloppy Joes never tasted so good - made with an abundance of fresh and whole foods. Hearty meets healthy in this veggie-rich savory meal. 

Ingredients

½ tsp ground Black Pepper
⅛ tsp Cayenne
1 Tbsp Navitas Naturals Yacon Syrup
2 Tbsp Coconut Oil
8 oz package of Grain or Soy Tempeh
1 diced medium Yellow Onion
1 diced Red Bell Pepper
2 minced Anaheim Chiles
2 diced stalks Celery
2 minced cloves Garlic
2 diced large Roma Tomatoes
4 Tbsp Tomato Paste
3 Tbsp Braggs Liquid Aminos, or Soy Sauce
1 Tbsp Apple Cider Vinegar
1 tsp ground Cumin

Directions

Crumble the tempeh into bits, resembling cooked ground beef.

Heat the coconut oil in a large pan over medium heat, and add the tempeh. Cook tempeh until slightly golden, about 5 minutes, stirring frequently to prevent sticking.

Add the onion, garlic, bell pepper, Anaheim pepper and celery. Cook another 5 minutes, stirring occasionally. Add tomatoes and tomato paste, and cook until tomatoes have wilted, about 3 minutes.

Reduce the heat to medium-low and Incorporate in the remaining ingredients. Simmer for 15 minutes, stirring occasionally, until thoroughly reduced.

Serve on top of hamburger buns, rolls, or sprouted grain bread.

Serves 3-4

Chef's Notes

Beneficial tempeh makes a superior high-protein and no-cholesterol stand-in for ground beef.
