Traditionally, jook is served for breakfast in street cafes or as a “get well” dish during cold and flu season. It is often served with duck or an over-easy fried egg, but can easily be adapted to a vegetarian diet.
1 Tbsp Navitas Naturals Goji Berries*
2 Cup Sushi Rice
5 Cup Water
* Goji berries can be cooked with the rice, or added after.
Boil the rice in a pot on the stove until the rice is very soft and breaking apart. Keep adding water to keep the rice soupy, like a porridge. Don’t let the rice dry out. Scoop the porridge into large bowls and serve with a variety of toppings for your friends to select from. Stir the toppings into the rice and enjoy.
