Cherry Goji Squares

Chunky & Chewy

A flexible recipe, other nuts and dried fruit may be added or substituted with ease.

Ingredients

½ tsp Sea Salt
1⅓ Cup raw Almonds
¼ Cup Navitas Naturals Chia Seeds
⅔ Cup Navitas Naturals Goji Berries
⅔ Cup dried Cherries, unsweetened, unsulfured
⅔ Cup Coconut Flakes
6 Tbsp Navitas Naturals Yacon Syrup

Directions

Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.

In a food processor, use the pulse feature to coarsely chop the almonds. Add the cherries and pulse several more times into a chunky dry mixture. Add the coconut flakes, sea salt, goji berries and chia seeds, then pulse until the ingredients are well tossed. Pour in the yacon syrup and briefly process to mix all the ingredients together – do not overmix.

Spread the mixture onto the baking sheet, and form into a compact rectangle, about a half-inch thick. Bake for 30-40 minutes, or until edges have turned golden. Remove from the oven and let cool for 10 minutes. Cut into squares on the pan, then let cool completely to allow the bars to further solidify. Makes about 1 1⁄2 2-inch squares.
