If for no other reason, make these muffins to make your house filled with THE most incredible cinnamon scent. Deliciousness aside, these little muffins are so full with nutrition they deserve an award. High protein, full of EFAs, stocked with fiber, and made with fantastic whole foods . . . spread a little coconut oil on top and heaven just came to visit your taste buds.
½ Cup Navitas Naturals Coconut Palm Sugar
½ tsp sea salt
2½ tsp cinnamon, divided
¼ Cup Navitas Naturals Hemp Seeds
¼ tsp nutmeg
2 Tbsp Navitas Naturals Hemp Protein Powder
2 Tbsp Navitas Naturals Chia Seed Sprouted Powder
2 Tbsp Agave Nectar
1 Cup Water
1 Cup Apple Sauce
2 tsp Vanilla Extract
2 Cup Whole Wheat Flour
2 tsp Baking Powder
Preheat oven to 350 degrees. Grease a 12-cup muffin tin.
Make the cinnamon swirl sauce: Mix the hemp protein powder, agave nectar and 1-1/2 tsp. cinnamon in a small bowl and set aside.
Blend: 1 cup water with the hemp seeds and transfer to a medium bowl. Stir in applesauce, palm sugar and vanilla extract and set aside.
Mix: In a large bowl mix flour, baking powder, baking soda, salt, nutmeg, 1 tsp. cinnamon and chia powder together. Fold in applesauce mixture and stir until just combined – do not over mix.
Fold: Pour in cinnamon swirl sauce. Fold into batter turning just 2 or 3 times (avoid mixing in too well to keep “swirl”).
Transfer & Bake: Spoon the batter evenly into 12 muffin cups. Bake for 20-25 minutes, or until a toothpick inserted in the muffin center comes out clean. Cool before serving.
