Lucuma Rice Pudding
A Traditional Treat with a Twist
This classic comfort dessert is an ideal stage for lucuma’s naturally sweet, maple-like flavor.
Ingredients
¼ cup Navitas Naturals Coconut Palm Sugar
⅓ cup Navitas Naturals Lucuma Powder
1 cup Arborio Rice
1 quart Unsweetened Almond Milk
2 cup Coconut Water
1 14 oz Can Coconut Milk (regular)
2 Mangos (peeled and diced)
Directions
In a large saucepan, combine the rice with the almond milk, coconut water, and coconut sugar, and bring to a boil. Reduce heat to a simmer and cook for 30 minutes, stirring occasionally, until the mixture has thickened. Stir in the lucuma and coconut milk, and cook for 10 minutes longer until rice is tender and mixture is creamy. Let cool to room temperature, then refrigerate until chilled, about 2 hours. To serve, spoon the rice pudding into bowls, and top with fresh mango.
