Mulberry Coconut Bites
Naturally sweetened squares
Naturally sweetened by mulberries alone, these easy treats are an exquisite mixture of sweet, citrus and a touch of spice.
½ cup Navitas Naturals Cashew Whole Nuts (+2 Tbsp. divided)
1 cup Navitas Naturals Mulberries (+1/4 cup divided)
½ Tbsp coconut oil
½ tsp vanilla extract
½ tsp allspice powder
1 tsp fresh orange zest
pinch sea salt
¼ cup dried coconut flakes (unsweetened)
Place 1/2 cup of the cashews in a bowl and cover with water; let soak for 30 minutes. Drain and discard the water.
Add 1 cup of the mulberries to a food processor, and mix until a coarse powder has formed. Add the soaked cashews, coconut oil, vanilla, allspice, orange zest and sea salt. Process until well incorporated and as smooth as possible. Transfer to a medium bowl.
Mix in remaining ¼ cup of reserved mulberries and dried coconut. Chop the reserved 2 tablespoons of cashews into fine chunks and add to the bowl. Mix to incorporate the ingredients well. Dough should be sticky enough to hold together when pressed – if too try add a touch of water, ½ teaspoon at a time.
Lay a piece of wax paper down on a flat surface, and transfer the contents of the food processer on top. Shape into a square or rectangle, cover with a second piece of wax paper, and press into a 1/2–inch layer. Place in the freezer for 30 minutes, then cut into 16 small squares. Best served straight from the freezer.
Makes 16 1 1/2-inch x 1 1/2 inch squares.
