Watermelon Goji Gazpacho

A spicy summer soup

Goji berries increase flavor and nutrition in this cool summery soup. Super refreshing!


½ Cup Navitas Naturals Goji Berries 
4 Cups cubed Watermelon
1 Cup peeled diced Cucumber
¼ Cup minced Basil
1 red Jalapeno Pepper, seeds removed and minced
¼ Cup freshly squeezed Lime juice
pinch Sea Salt


In a food processor or blender, blend all the ingredients together into a puree. Refrigerate for 30 minutes before serving, and serve chilled. 

Optional: top with extra minced cucumber, watermelon and black pepper.

Yield: 6 Servings
