Apple Trail Mix Farro

Superfood Salad

Try this light and healthy lunch that is super easy to make!


1 Cup Farro (cooked)
1 small Apple (diced)
½ tsp minced Ginger
¼ cup plain Yogurt
1 tsp Honey Mustard
¼ tsp Agave Syrup
1 tsp Apple Cider Vinegar
Salt and Pepper (to taste)


Combine cooked, cooled grains, then stir in apple, ginger, and trail mix.  

For the dressing,  combine yogurt, honey mustard, agave, apple cider vinegar, and salt and pepper.

Chef's Notes

This salad has a great combination of textures, from the crispy apples to the chewy grains and dried berries, with a bit of crunch from the cashews and creaminess from the dressing.
