Zucchini Bread

with Cacao Nibs

The sweet cacao nibs taste more like dark chocolate than sweet chocolate in this recipe, and brings a new dimension of flavor to a typical zucchini bread recipe.


½ Cup Navitas Naturals Cacao Nibs Sweetened
3 Cups whole wheat flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
3 tsp ground Cinnamon
3 Eggs
1 Cup Apple Sauce
2 Cups Brown Sugar
3 tsp Vanilla Extract
2 Cups grated Zucchini


  1. Preheat oven to 325 degrees F.
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Spoon into lightly greased loaf pans (I sprayed mine with cooking spray) and bake for 45-50 minutes, or until a toothpick inserted into the middle comes out clean.
  4. Beat eggs, applesauce, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until combined. Fold in Cacao Nibs. Pour batter into prepared pans.

Yield: 2 8x4" pans
