Chocolate Chip Cookies

2 cup Navitas Naturals Coconut Palm Sugar
4 oz Navitas Naturals Cacao Sweet Nibs
1 Cup Butter (softened)
1 tsp Vanilla Extract
2 Cups Unbleached Flour
2½ Cups Oats, measured then powdered in food processor
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
12 oz Chocolate Chips
Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.
Cream butter and sugar until light and fluffy. Add eggs one at a time, then add vanilla. Beat for approximately 5 minutes. In the meantime, combine flour, oats, salt, baking powder and soda in a separate bowl and mix well. Add to butter mixture. Stir in cacao nibs and chocolate chips.
Using a small scoop, scoop out cookies and place on baking sheet 2 inches apart. Bake for approximately 12 minutes.
