Bluberry Chevre Pie

1 Tbsp Navitas Naturals Acai Powder
1¼ Cups Walnuts
6 Tbsp Maple Syrup (divided)
2 tsp Vanilla Extract (divided)
6 oz Plain Chevre
1½ cup Blueberries, fresh or frozen
¼ cup Dried Cranberries
Grind the walnuts in a food processor. Add 2 Tbsp. maple syrup and 1 tsp. vanilla extract, and blend well. Press into the bottom of a 9-inch pie pan.
Blend the chevre, blueberries, 4 Tbsp. maple syrup, acai, and 1 tsp. vanilla extract in a food processor. Taste and adjust the flavor, if desired. Pour and spread the blueberry chevre mixture over the walnut piecrust. Decorate the top with dried cranberries. Chill and serve in about an hour.
You can make this luscious pie with creamy chevre and blueberries. Sweetened with a touch of maple syrup on a raw walnut crust, quick and easy to whip up. Blueberries and acai are rich in antioxidants, walnuts offer vegetarian source of Omega 3s. Decorative dried cranberries also make this superfood treat delicious and nutritious.
