Maple Caramel Apples

Enjoy this healthy version of a classic autumn treat any time of the year!


1 Cup (+ 3/4 cup divided) Navitas Naturals Cashew Whole Nuts
½ Cup Navitas Naturals Cacao Nibs Sweetened
6 Tbsp Water
¼ Cup Maple Syrup
2 Tbsp Coconut Oil
1 tsp Vanilla Extract
pinch Himalayan Salt (generous)
4 Apples
4 Chopsticks


Maple Caramel
Blend 1 cup cashews, water, maple syrup, coconut oil, vanilla extract and salt in a high speed blender until very smooth. Pour into a bowl. Refrigerate for 3 hours to thicken. Place the chopsticks through the center of the apples. Dip the apples in the caramel and roll around to coat.

Crunchy Coating
Mix ¾ cup cashews and cacao nibs in a medium bowl. Pour onto a plate. Roll the caramel coated apples to coat evenly. Place on a plate and serve. Can be stored in the refrigerator. If you have any leftover caramel and coating, mix them together and freeze for candy!
